Ham Stuffed Squash Boats

I only help cook primarily stuff from garden. One of my favorites is ham stuffed squash boats.

Sautee onions in butter. dice some ham into very small pieces. We use deli sandwich ham. Add some seasoning. Take the yellow squash, cut lengthwise and scoop out seeds an make squash have a semi hollow inside. Take the scooped out squash and mix with onions, ham and spices mix and cook a bit in fry pan.

Take squash boats and put in pot with water and bring to boil and let cook until soft. When soft stuff each one with the max mix. place your favorite cheese on top. Place in oven at 350 for about 10-15 minutes. Time varies with size and amount of stuffing so check them periodically.

We do batches of 10-20. Eat a few for supper and freeze the rest. Make great meals in winter or when you have unplanned guests. Quick and easy and people like them.
