There are ways to keep eating and enjoying it

I make whole grain spaghetti or pasta, or else cut up potato, with cut up veggies, especially cabbage, and hummus or else beans, and salsa, with seasonings, frequently. I also have hummus and pickle slices in sandwiches often, and bean burritos I make with cabbage and salsa too. But there are many more things. I occasionally get vegan boxed deliveries which are certainly available.
