smoked sausage

in the last couple of weeks we have made just over 100 lbs of smoked sausage ,
made 17 lbs this morning
i finally got to use my new "Dakota water stuffer " that thing is amazing !!!
its waaaaaay easier and faster than any stuffer i have ever used in the past

Sounds really cool. Have you been vacuum sealing and freezing the results?

yes we have !! all the people that we gave them to like the fact that the sausage is vacuum sealed and fresh frozen

Good deal. Last time I smoked ribs, I did some extras, sealed and frozen them. Haven't thawed and reheated any yet but am expecting good results. Assuming this works, it'll make eating ribs more convenient than ever!
