Low-Fat Lazy Day Lasagna in A Crockpot

15 ounces lowfat ricotta1-1/2 cups lowfat cottage cheese6 Tbsps. Parmensan cheese,grated3/4 tsp. dried oregano,divided1 ( 28 oz.) jar spaghetti sauce7 - 8 traditional lasagna noodles,uncooked2/3 c. shredded part skim mozzarella cheese

Directions - In medium bowl, combine ricotta & cottage cheese, 2 Tbsp. water,1/4 c. parmensan cheese & 1/2 tsp. oregano. Place spaghetti sauce in medium bowl. Add 1/2 c. water unless sauce is already thin. Spread 1/2 c. of sauce on the bottom of a 4 to 6 quart slow cooker. Place 1/3 of the lasagna noodles over the sauce,breaking the noodles to fit. ( Don't worry if small space are uncovered). Cover the noodles with half of the cheese mixture ( 1-1/2 cups), then top with 1 cup sauce. Repeat. Top with remaining noodles,cover with remaining sauce & sprinkle on the mozzarella,the remaining oregano & parmensan. Cook for 3-1/2 hours on low or until fork tender. Turn off heat & let sit 15 - 20 minutes before serving.
