Bourbon Chocolate Chip Cookies

I've been inspired over the past several months with the various recipes that have been printed by the group. Well, I can no longer remain silent. I feel that I must add my favorite cookie recipe to the mix, so to speak.

Ingredients:

1/2 cup softened butter
1/2 cup brown sugar
1/3 cup granulated sugar
1 egg
3 tablespoons bourbon
1 1/2 cup all purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup semi-sweet chocolate chunks or chips.

In a bowl mix the butter and sugars until light and fluffy.
Add the egg and bourbon. Mix again.
Add the flour, baking soda and salt and mix again.
Now, fold the chocolate chips until well distributed. Don't over do the mixing.

Shape the dough into small balls, about 2 teaspoons worth and place them on a plate. Makes about 20 or so.
Cover the plate and place in the fridge for about 2 hours. (Less than 2 hours and the cookies will come out flat.)

Preheat the oven to 350 degrees F.

Place the dough balls about 2 inches apart on a parchment lined baking sheet. You can also use a cooking spray or grease to cover the cooking tray if you are so inclined.

Bake for 10 - 12 minutes. It's OK if the cookie doesn't look "done".
Remove from the oven and cool on the tray for 5 minutes and then transfer to a wire rack for the rest of the cooling time.

Serve immediately, or you can place them in a container for a week, or freeze them up to 4 months.
