Fried Egg and Sausage Breakfast Pizzas

These individual pizzas beg to be modified according to your own
preferences, so feel free to use this recipe as inspiration for
your own creations.

3-4 scallions (spring onions), green and white parts, chopped
1/2 cup (125 ml) olive oil
Salt and freshly ground pepper to taste
2-3 ciabatta rolls, halved horizontally
4-6 slices pepper Jack cheese
1 lb (450 g) Italian sausage, casings removed
4-6 eggs

Combine the scallions, olive oil, salt, and pepper in an electric
blender and process until the scallions are finely chopped.Reserve
2 Tbs (30 ml) of the mixture and spread the remainder over the cut
sides of the ciabattas. Top each with a slice of cheese. Saute the
sausage in a skillet over moderate heat, breaking it up with a
spoon, until browned and cooked through. Divide the sausage between
the ciabatta halves. Place on a baking sheet and bake in a
preheated 400F (200C) oven until the cheese has melted and the
bread is lightly toasted, about 10 minutes.Meanwhile, heat
the reserved scallion oil in a large non-stick skillet over
moderate heat and fry the eggs to the degree that you prefer. Place
an egg on top of each pizza.
Serves 4 to 6.
