what's the dish you cook the most or is your most favorite? mine is tortillas and eggs.
1/2 and onion diced
3 corn tortillas cut into chip sized wedges
1 link chorizo/bacon/sausage/ any meat you want
3 eggs
amount of desired cheddar
take the chorizo out of casing and cook on medium low heat and render out all the fat. when chorizo is 3/4 cooked, add the onion and cook until soft, about 5 min. when that's done turn the heat up to medium, add a pat of butter and add the corn tortillas. cook until soft or crispy, whatever you like. when they're just about done, add the eggs and cook until almostdone and then add your cheese. if you cook this dish right you shouldn't need any seasoning.

I make something almost just like this for breakfast on weekends, except I use broken tortilla chips instead of torn tortillas and don't use any meat (I'm a vegetarian). I just cook everything in olive oil and add fresh ground black pepper to the eggs. When everything is cooked, I pour a little picante sauce over it. It's very good served with waffles and real maple syrup on the side.
