Bent69`s Homemade Protein Bars

span style="font-family: `lucida grande`; font-size: 11px; line-height: 14px;"OK, this is adapted from a recipe you can find on the web at Stella`s Kitchen.
Dry Ingredients:
3 1/2 cups Quick-cooking oatmeal (not instant)
4 scoops whey protein (your choice for flavor...I have used vanilla, chocolate and strawberry)
Add ins:
~ 1/4 cup Dried fruit (apricots, blueberries, cranberries, raisins, cherries...you name it) and/or
~ 1/4 cup chopped nuts and/or
2-3 Tbs Flax seed
...whatever you want.
Wet ingredients:
2 egg whites - beaten to soft peaks - it is ALL about increasing the volume here
1/4 cup Maple syrup
1/2 cup fruit juice (I have used orange (vanilla whey), cranberry (with chocolate or strawberry whey), carrot (vanilla whey)....feel free to be creative)
1 cup Low Fat Yogurt
1 tsp Vanilla extract
1 ripe banana - mashed - this addition makes for a "cakier" bar
Option: If you are a peanut butter lover, stir 3 Tbs peanut butter into the final batter before putting it into the pan. Optionally, peanut butter can be spread on top of the bars when done. We have found this a good choice for chocolate and vanilla bars.
Oven to 325F, spray a 9" x 13" baking pan with canola oil. Mix dry ingredients in large bowl; After beating egg whites, add remaining wet ingredients and stir to combine. Pout wet mixture onto dry mixture and mix thoroughly. Pour into pan and spread evenly. Bake for 25 mins, top will be set and firm and bottom golden brown. If your batch is a bit wet, another 1-2 minutes should do it. Remove from oven and cool for ~15 minutes before slicing into 10-12 bars and removing to a wire rack to cool fully. We bag these in Ziploc bags and store in the refrigerator, warming them in the microwave (1 minute @ Power Level 4). Enjoy.

NOW I know why you spend so much time in the kitchen. I would send you my favorite ( and totally unhealthy ) Red Velvet Cupcake recipe but you may try to have me banned from TN.

Hey thanks Bent for the recipe!  As a backpacker I can see this fitting right into my backpack!  I plan to try it soon and it sounds delicious.

Okay, but where` sthe nutrition information label?  C`mon, Bent - I need to know:  How many calories per serving?  Shoot - how many servings per container?  Vitamin A?  B?  C?  Er... What`s that other stuff...? B12?  B-something, I know that.  But heck, Bent... see why I need to know this stuff?

Yes, the yogurt is an update from the original. I took out the applesauce and cut down on the juice, :-)

Glad this resurfaced, I didn`t make any before, but these would be good for hiking or deer hunting now that season has opened.

I`m with WS Gilbert on this: "Deer hunting would be a fine sport, if only the deer had guns".

I`m with WS Gilbert on this: "Deer hunting would be a fine sport, if only the deer had guns".

That would make it sport, however I don`t hunt for sport.  I hunt for the meat.
