Pulled BBQ Pork - yes I am a Yankee, don`t freak out.

span style="font-family: Arial; font-size: 12px;"Rub: 2 Tbs salt; 2 Tbs ground pepper; 2 Tbs Chili powder; 1 Tbs garlic powder; 2 tsp ground coriander; 2 tsp ground mustard seed.
5 lb pork butt (also known as shoulder or picnic)
For the pan: 12 oz Apple cider (beer could be used here is you wish); 4 cloves of garlic, chopped.
Sauce: 1/2 cup ketchup (we use natural or One carb); 2 Tbs whole grain mustard (Dijon, too); 3 Tbs Worcestershire sauce; 1/3 Cup dark brown sugar
Combine all the rub ingredients; cut off skin and excess fat from pork (don`t worry, there is plenty of fat in this cut to keep it moist); rub the mixture all over the pork and wrap in plastic wrap and refrigerate for at least 1 h (if not up to 24); Preheat oven to 500 degrees (F); remove pork from wrap and place center of a roasting pan with 2" sides; place in oven and roast for 45 minutes until darkly brown all over (it will smoke when you open the oven); remove from oven and lower temperature to 325 degrees (F); pour cider over the meat and sprinkle the garlic around the pork; cover tightly with heavy-duty foil and poke a few holes (~10) in the top; replace in oven and braise for ~2 1/2 hours; remove from oven and place meat on a platter; using a fat separator, remove the excess fat from the pan juices (as much as you can) and then place de-fatted sauce into a sauce pan; add sauce ingredients, mix well, and reduce volume in half by simmering on med low heat (~20 minutes); In the mean time remove pork from bones (it will be HOT) and either using two forks or your fingers, shred the pork (I shred it back into the cleaned roasting pan - you will also likely find a few more fat pockets to remove); pour the thickened sauce over the meat and work in until well absorbed.  Serve with a good creamy coleslaw on the side (or in sandwiches on good rolls with slaw on top) and sweet potato "fries".  Hope you all enjoy...it is pretty simple to make.

Well, I`m a Texan.  Most of our wonderful BBQ is beef brisket, not wet.  However, I absolutely love North Carolina style pulled pork that I was introduced to a a pig roast at a family member`s place outside Raleigh a couple of years ago.

I`m a southerner and this is a sad post.
To think that you cooked a butt in an oven and call it BBQ!! In spite of the warning, I`m freaking out. Come on down south and get your butt slo cooked!!!

I agree with allistan.  Prok butt and an oven don`t go together if you`re going to call it BBQ.  That makes it just another pork roast.  I cook it in my smoker for about 12 hours, then it just falls apart.

All good things....that is why I am a Yankee.....I can`t slow down that much. LOLI would love to come on down for soem smoked pork....TYHAT stuff is awesome!!

I have also cooked pork butt like that on my BBQ pit.  When I was done I had a hard time slicing it because it was so tender.  I cooked it wrapped in foil till almost done like I do my brisket, keeps it moist and then remove foil when it is almost done.  I also cook with wood, no charcoal for me.

went to skool (
) in the central piedmont of NC and fell in luv with carolina BBQ...texas in fine but carolina is my first luv...yum

I live in NC and love NC style BBQ, but Bent`s recipe sounds good, too. Not all of us have their own personal smoker. You make do with what you have or go buy some. Thanks for the recipe!
